Ingredients: (Makes 1 Quart)
1½ cup coconut water
1 large carrot (cut into pieces)
¼ of a medium sized raw beet (peeled)
¼ cup cashews (soaked in water overnight and drained)
¼ cup dates (chopped)
2 teaspoons vanilla extract
1 cup frozen strawberries
2 Tablespoons flax seeds
2-4 Stevia drops for desired sweetness
Directions: Combine all ingredients except strawberries and blend for 1 minute. Add strawberries and puree on high until smooth. Drink immediately or keep in the refrigerate for 24 hours.
